Buttermilk Sugar Cookies

These are more puffy

5 1/3 cups flour
2 tsp. baking powder
1 1/3 cups sugar
1/2 tsp. salt
1 cup margarine (use 1 cube butter and 1 cube margarine)
3 beaten eggs
1 cup buttermilk
1 tsp. soda
1 tsp. vanilla

Mix soda and vanilla in buttermilk. Mix eggs and margaine, add buttermilk. Add sugar and mix well. Add dry ingredients. If dough is too stickyt or soft, add a little more flour. Roll out on a pastry cloth that has been floured. No need to chill this dough! Roll 3/8 to 1/4 inch thick and cut out. Bake 375 degrees for 10 minutes. Makes 3 dozen good size. These puff up and don't get brown when they are done.
